A good BBQ weekend in Santa Ana is simple: great food, enough time to sit down, and maybe a little extra for tomorrow. We have been part of this community since our pop-up days, and we still cook the same way — low, slow, and meant to be shared.
Whether you are feeding two people or twenty, a little planning makes the meal better.
Start with pickup timing
Our menu changes with what is fresh from the pit, so check what is available before you drive over. If you can, choose an earlier pickup window. Brisket, dino ribs, and sides taste best when you eat them soon after pickup — still hot, still juicy.
Not sure what to order? A mixed plate with brisket and a side is the easiest introduction. Feeding a group? Tray orders let you stack meats and scratch-made sides without guessing portions.
Make it a full spread
For family gatherings, office lunches, or a backyard hang in Orange County, trays are the move:
- Pick a protein anchor — brisket, ribs, barbacoa, or sausage
- Add two or three sides like creamy mac, tangy slaw, or spicy dirty noodles
- Give yourself at least a week of lead time so the kitchen can prep your order right
