How to Order BBQ Trays for Office Lunches and Family Gatherings

May 5, 2026 · Gee's BBQ Team

Build a Gee's BBQ tray with brisket, dino ribs, scratch sides, and a one-week lead time — perfect for Santa Ana pickup.

Tray orders are how a lot of our regulars feed a room without committing to full event catering. Think office lunches, graduation parties, church gatherings, and Sunday family tables — real food, smoked low and slow, ready when you arrive.

If you have ordered a single plate from our menu before, trays are the same quality with bigger portions.

What goes on a tray

Our tray menu focuses on the meats and sides people actually want to share:

  • Meats and proteins — brisket, dino ribs, lamb barbacoa, sausage, and more
  • Scratch-made sides — creamy mac, tangy slaw, spicy dirty noodles, bright pickled vegetables
  • Desserts when you want to finish strong

Dino ribs are sold by weight with a minimum portion, so they are a great centerpiece when you want something people remember.

Plan at least one week ahead

Tray orders need at least one week's notice. That lead time lets us trim, smoke, and batch sides the right way instead of rushing a big order through the line.

When you build your tray order, choose your pickup location, date, and time first. Then add trays from the menu — the kitchen sees those details on the order so everything is ready together.

Trays vs. event catering

Trays are pickup-friendly: you order online, we smoke it, you grab it and serve. Event catering is the better fit when you need staff, setup, or a custom quote for a larger event. If you are not sure which path fits, start with trays for groups under roughly thirty guests and reach out about catering when the guest count or logistics grow.

Tips for a smooth pickup

  1. Confirm headcount — a little extra beats running out mid-meal
  2. Mix proteins and sides — one rich side, one bright side keeps plates balanced
  3. Reheat carefully if needed — our heating instructions cover brisket, ribs, and mac and cheese

Trays are barbecue meant to travel — still smoky, still scratch-made, still worth gathering for.
